~ Pastrami ~

~ Four Pounds of Boyle's Famous Corned Beef ~ Made in Kansas City ~

Well, I saw on the net that Pastrami is Smoked Corned Beef... Hey I can do that... Looked up the recipe, found one I could agree with... Headed up to the Price Chopper for a couple spices I didn't have and a nice hunk of 'Boyle's Famous'... corned beef...

So.. back at the Ranch, decided to do my Pastrami and do a video along the way... You can buy a raw beef brisket and brine it.. or just buy a pre-brined (corned) beef and start from there and save a couple weeks... Start by rinsing off well, the salty brining solution... Then dry and dust heavily with a dry rub... Similar to my BBQ rub but some different too, ground coriander and smoked paprika added to course ground black pepper, red pepper flakes and garlic powder...

Then into the smoker with a hunk of hickory wood for about 4 hours... looking good... Then wrapped and into the oven at 250 for another hour or so... Out of the oven to cool overnight in the fridge...

Next day, Friday, sliced up the Pastrami, packed into plastic bags and in the freezer with some, some into the fridge to try for dinner later... And then... loaded a couple large slices of Pumpernickel with Pastrami, mustard and some horseradish, then sample for the camera like Paula Deen does and I had to be honest that I was not overly impressed, though it is good... But I don't recall ever tasting any Pastrami from the deli or the store... So it may be GREAT!

~ Applesauce! ~

Started this Making an Apple Pie, then Applesauce, ended up with another Boring Video...

First the Apple on the Wrong Way ~ The Right Way ~ and Voila!

A few days back I was going to make an apple pie and tried my very old peeler, slicer machine.. But it didn't work right... So I gave up and did it the manual way and finished up my pie...

Got to thinking about that.. I had put the apple on with the top end on the spines... Maybe that's wrong... So I got some more apples for applesauce and tried it.. AHA.. now it works... But the machine saya... Pares, Slices and Cores... But it didn't peel... But it slices and cores nicely so I peeled the rest and then sliced, cored them, chopped a little and into the pot with sugar, nutmeg, cinnamom and vanilla... Simmered til soft and then mashed to a rough consistency.. I like chunky applesauce...

After a Good Rinse and Dry, Paint with Mustard ~ Then Dust with El Pato Dry BBQ Rub

Then Into the Smoker for about Four Hours ~ Next paint with KC Masterpiece BBQ Sauce and cover with Foil

Into the Oven at 250F for another Hour and Voila! Piernas Del Pavo Excepcional!

Saturday... made it to the Farmer's Market... Got Three Cucumbers for a $1... Six nice ears of Sweet Corn for $2... And a nice Eggplant for $2

Then back by Kicks 66 to trade my $6 winner Bingo from yesterday for a Bingo and Crossword... Then By the Price Chopper for 4 nice Turkey Legs, Back home to win $6 on the Bingo... Then prepped the Turkey Legs and got them in the smoker... Had some Biscuits with Sausage gravy for breakfast.. Saw I was running out of milk... So Back to the Price Chopper for a gallon of milk and traded my winner Bingo for another Bingo and Crossword... Won another $6 on the Crossword this time

Now the ribs in the smoker, everything under control, picked a couple tomatoes and then kick back to watch TV and wait on the ribs

Saturday again... Farmer's Market today... I will run down this morning and get me a cucumber, some sweet corn and maybe a nice eggplant... do that oven fry roast thing again, that stuff was GOOD!

And.... I got bored again yesterday and got a couple twenties out of the ATM and headed for the Casino... Was there about 15 minutes, hit two Double Bars and a Five Times for a 100 credit Win... Cashed out for $62.50 and dropped by the Riverside RED-X for a Bingo and Crossword and headed back to the ranch... to work the Bingo for a $6 win and the Crossword for a dud...

The Mariachi peppers were getting some color and didn't look like they were getting any bigger so I picked the 4 biggest ones... Split and seeded them and par-boiled a bit to soften up... Then diced up several slices of smoked beef brisket, chopped up some sweet onion, diced a clove of garlic, added that to the beef with some ketchup and simmered that a bit... Then fill the peppers with that mixture with the excess in the center, topped with shredded Parmesan cheese and VOILA... Covered and in the fridge, later will bake in the oven a bit and have some stuffed peppers, maybe have some mashes potatoes on the side... And maybe that cucmber in vinagraitte I get at the Market...

~ Latest Pick and Pickling ~

Hah! Picked 20 more jalapenos off that plant and there are still some smaller ones on there... That brings the harvest to 39 or so...

And I put several in a plastic bag in the fridge to use fresh and pickled about a pint of the rest. I have two half pints seasoning in the fridge now and have still a half jar of ones I got at the Store.. I have enough for all winter now it looks like...

Now I have a few Mariachi peppers ripening nicely, Might have to pick and stuff a few of those pretty soon... No tomatoes ready now, they must be resting up for the big crop soon

~ Now... What is This? ~

~ Caramel Corn... Cinnamon Corn ... Sticky Stuff? ~

Well then... call it an experiment... Watching TV and thinking of munchies, what would be good? Popcorn.. maybe... Sticky popcorn? How ya make that?

So, out to the kitchen to see what might be... Popped uo my big stailess bowl of popcorn, now what.. added salt and butter... In another pot I added some plain corn syrup, some brown sugar, some vanilla, some cinnamon, some allspice... some butter.. and a shot or two of bourbon... That can't be all bad...

So I simmered that mixture a bit, then stirred it into that bowl of popcorn, then packed it into my large Pyrex dish and into the fridge to set up... Then cut it into bars and tried one... But it falls apart in a minute or two so you have to eat it with a spoon...
~ And... Guess What? It is GOOD! ~

Well, more like five or six weeks... That gallon holds about 5 bottles of wine... And The Price Chopper did have it on sale a week or so before at $9.98 and their regular price is $12.90... That is still under the $14 most sell it for... But this week they had it on sale for $8.45 so I had to stock up... Well it wont spoil in the bottle you know... And I won't have to buy any wine until some time in September...

~ In the Bed ~ In the Pot ~

OK, tie up time again, and look at them climb that trellis... almost as high as last year already... somewhat better than last year...

And you can't see them too good here, all those leaves, but I counted over 20 tomatoes in there and I know that isn't all

And the plant in the pot isn't near as big but I counted over 15 in there now and already picked about 10 or so...

~ AND Now I KNOW... there will be a Bumper Crop in August! ~

Now! Two more Better Boy Tomatoes out of the bed... and a another nice sized one, the smallest here... from the pot... But I counted about 15 more small ones coming on there. The Plant in the pot is not nearly as tall as the two in the bed but has produced more tomatoes so far... But now the ones in the bed are reaching for the roof again and I will believe produce a lot more in the next two months... and.. maybe they vines will not fall over of their own weight with the additional bracing...

Hey! The FIRST Better Boy Tomato out of the bed... and a nice sized one, a couple days on the table and that one goes on a nice fat burger with some oven fries... You bet!

And there too is Number 4 and Number 5 out of the pot, counted another dozen coming along there, one almost ready to pick... Not as many as 2007 so far but coming along nicely... The ones in the bed now climbing oto the sky like last year...
